Summary:
It never even occurred to Sabine to change her routine when she started living with Vincent. He thought she had OCD, which would make sense considering how extremely distressed she felt when she couldn't fulfill her little obsessions. However, she couldn't deny that Vincent's presence altered some things.
She didn't exactly need to change. The more appropriate word would be adapt.
Darwin already explained this. Those who adapt best to the conditions have a greater chance of survival.
Sabine's adaptation provided her with good doses of endorphins, serotonin, and oxytocin. Hormones that helped her survive and made her want to live.
